Chickpea, Avocado, & feta salad
this healthy chickpea, avocado, & feta salad only takes 5 minutes to create.
It’s fantastic for a quick lunch, dinner, or snack!
Recall my smashed chickpea & avocado salad sandwich? If you have tried it, you know what I am referring to. It is pretty much the best sandwich ever. I eat it all of the time. If you haven’t tried it, then you are missing out. Add it to your must-make list at the moment.
The other day I was going to make my favorite sandwich for lunch, but that I was in a hurry, so I decided to throw together a quick salad using the same ingredients. My favorite sandwich turned into my new favorite salad.
Please don’t attempt it, though, since you need to use a knife to chop the avocado up. It’s super-duper easy! Probably the easiest and tastiest salad I have ever produced.
All you need to do is mix chickpeas, avocado, cilantro, green onion, feta cheese, and a little lime juice. That is it. Five minutes is all you want to make this healthy salad! It is perfect for a quick lunch, dinner, lunch, or a healthful snack! And it is a great recipe to serve at parties because it’s so simple. And everyone will want the method!
If you’ve made my favorite sandwich, you know, I do not use feta, but I decided to add it to the salad for color and a kick of flavor. If you need the recipe to be vegan, you can leave it out, but I loved it! I might need to add a bit to my sandwich next time)
This is a great recipe to have on hand for when you are not in the mood to cook but still need something yummy and healthful to eat!
The next time you don’t know exactly what to make for dinner or lunch…or believe you don’t have time to generate a healthy meal, recall my chickpea, avocado, and feta salad. Everybody has 5 minutes. No explanations:)
